About Raw Chocolate

Some of its Therapeutic Qualities

Raw chocolate is made from the raw/unroasted beans (seeds) found inside the pod-shaped fruits of the cacao tree, which is traditionally grown under the rainforest canopies within, approximately, 20 degrees on either side of the equator. Our chocolate is organically and sustainably grown by a co-operative of about 5,000 small farms located throughout Ecuador.

Allow me to share some of the therapeutic qualities of raw cacao. An FDA test showed that raw cacao has more antioxidants per gram than any other fruit or vegetable on earth! The test included over 250,000 foods with raw cacao ranked 3rd and only the spices of cinnamon and clove taking higher honors. An antioxidant is a molecule capable of inhibiting the oxidation of other molecules. Oxidation reactions can produce free radicals. In turn, these radicals can start chain reactions that damage cells. Antioxidants terminate these chain reactions by removing free radical intermediates and inhibit other oxidation reactions. How wonderful to have something that tastes sooo delicious and be this supportive for us! Antioxidants are measured in ORAC units (oxygen radical absorbance capacity). Raw cacao comes in at 955 units/gram! This is about 10% of its total weight! It contains between 500%-3000% more antioxidants than the powerhouses acai berries, goji berries, and green tea. Raw chocolate even contains 367% (up to 1000%+) more antioxidants than even the very best cooked dark chocolate. It also contains high quantities of the amino acid Tryptophan, which is proven to promote restful sleep and relaxation; Phenylethylamine (PEA), which is said to promote the "love" feeling; Anandamide, a neurotransmitter, which stimulates the centers in the brain that relate to mood therefore promoting the feeling of "bliss" and offering natural pain relieving properties!

We do our best to honor the cacao bean by keeping it as close to "fresh off the tree" as possible, with all preparations from fermentation to finished chocolate kept under 118 degrees. Cooking and roasting of the cacao/chocolate at temperatures over 118 degrees breaks down the natural structure of the cacao bean, destroying vital enzymes, antioxidants, and nutrients.
